With Christmas round the corner fruit cake is a must. We already have seen two fruit cake recipes. This fruit cake is eggless and we are making it in oven. This is very easy and simple recipe. It can be made from the ingredients easily available in your kitchen. It turns out nice, fluffy and soft. You can try this recipe at home and drop a comment for me. Ingredients:
• 1/2 cup Sugar
• 1 tbsp black Raisins
• 2 tbsp Cranberries
• 2 tbsp Raisins
• 2 tbsp Walnuts
• 2 tbsp Prunes
• 2 tbsp Cashew nuts
• 2 tbsp Cherries
• 2 tbsp Almonds
• 2 tbsp red Tutti frutti
• 2 tbsp green Tutto frutti
• 2 tbsp yellow Tutti frutti
• 2 tbsp Apricot
• 1 1/4 cups hot Water
• 1/2 cup Oil
• 1/2 cup Water
• 1/2 cup powdered Sugar
• 1/2 cup Milk powder
• 1/4 tsp Cinnamon powder
• 1/4 tsp Nutmeg powder
• 2 cups Maida
• 1 tsp Baking powder

Method:
• Turn on the gas on low to medium heat.
• Place a pan on the gas and spread sugar in it.
• Let the sugar be in the pan on low heat for about 3-4 minutes.
• Don’t touch the sugar and don’t use water at all.
• Let the sugar melt completely.
• When all the sugar melts caramel is all ready.
• You can use brown sugar in place of caramel.
• Turn the gas on lowest possible setting.
• Add a little hot water at a time in hot caramel and stir well.
• Let caramel dissolve in water.
• Add black raisins, cranberries, raisins, walnuts, prunes, cashew nuts, cherries, almonds, tutti
fruit, apricot in caramel water and cook for at least 5 minutes.
• Turn off the gas and let the mixture cool down completely for about 30-45 minutes.
• Take oil in a bowl and add water, powdered sugar, milk powder.
• Mix everything well together.
• Add cinnamon powder, nutmeg powder and mix well.
• Place a sieve on the bowl and add maida, baking powder.
• Mix well and sieve the mixture into the bowl.
• Transfer the dry fruit and caramel mixture into the bowl and mix everything well together.
• Take a baking tray and line it up with wax paper at the base.
• Transfer the mixture into the tray and spread it evenly.
• Tap the tray really good and garnish the cake with few dry fruits.
• Remove the whistle and rubber ring of the cooker and preheat the cooker closed on medium
heat for about 5 minutes.
• Place a stand at the base of the preheated cooker and cake tin on it.
• Close the lid and bake the cake on medium heat for about 45-50 minutes.
• After baking the cake for 50 minutes on medium heat turn off the gas and let the cake be in
the cooker for another 10 minutes.
• Take the cake tin out and check with tooth pick.
• Let the cake cool down completely.
• Loosen the edges and flip it over into a dish.
• Eggless Christmas cake is all ready.
