METHOD Start by preparing the pie dough: mix together the flour and butter, add the salt, and then gradually add the cold water. Knead for a couple of minutes and then refrigerate the dough for 30 minutes. Boil the spinach, or cook them in a pan with some olive oil and a garlic clove. Dry them off and add the ricotta, salt, pepper and 2 eggs. Mix everything together well. In the meantime, divide the dough into two part, roll out the first half and place it on the pie dish. Fill it with the spinach and ricotta mixture. Make 4 holes in the mixture and place the eggs in them. Cover with the remaining dough. Bake at 190°C for 45 minutes.
