For the biscuit:
880g (6 1/2 cups) flour
3 tsp baking powder
1/2 tsp salt
250g (1 1/4 cup) butter cut into cubes
Grated zest from 1 lemon
150g (3/4 cup) light brown sugar
150g (3/4 cup) sugar
1 tsp vanilla
For the cheese-cream:
450g (2 cups) mascarpone
450g (2 cups) cream cheese-softened
120g (1 cup) powdered sugar
4 tbsp corn starch
1 tsp vanilla
For the glaze:
60g (½ cup) powdered sugar
2 tsp milk
In a bowl mix together the flour, sugar, salt, baking powder and lemon zest. Add in butter, vanilla and eggs, mix it well. Transfer about 1/2 of the prepared dough into the baking pan.
In another bowl mix together cream cheese, mascarpone, caster sugar, corn starch, vanilla and eggs, mix it well and transfer to the baking pan, sprinkle with blueberries and top with remaining dough.
Bake at 350 F (175'C) for 65-70 minutes.
Pour with prepared glaze.
