INGREDIENTS
For the biscuit:
120g (1 cup) flour 00
120g (0.6 cup) sugar
4 eggs at room temperature
1 pinch of salt
Peel of one lemon
5ml (1 tsp) vanilla extract
50ml milk
For the cream:
500ml (2 cups) milk
4 egg yolks
120g (0.6 cup) sugar
40g (0.3 cup) cornstarch
5ml (1 tsp) vanilla extract
Lemon zest
250 g strawberries
Powdered sugar to taste


METHOD

Combine eggs, sugar, salt, lemon zest, vanilla extract and mix. Then add the flour and combine with light movements.
Pour the mixture into a baking tray lined with baking paper. The tray measures 40 x 30. Bake in a preheated oven at 200 degrees, 7-8 minutes.
Prepare the cream. Combine milk, egg yolks, sugar, starch, vanilla extract, lemon zest and stir over low heat until ingredients are combined and thickened. Allow the cream to cool, then mix with the whipped cream.
Cut the biscuit into stripes, fill with cream and roll. Put the cream on each roll and decorate with strawberries.
