Lavender Honey Macarons Recipe (12 macarons)

The shells
40g egg white
40g granulated sugar
50g almond flour
50g powdered sugar
1 tsp dried lavender flowers

The filling
2 egg yolks
40g sugar
2 tbsp water
60g butter
2 tbsp honey

Instruction
-Process almond flour together with powdered sugar and lavender flowers using food processor
-Sift thoroughly and discard big chunks
-Whisk egg white to soft peaks then gradually add granulated sugar
-Whisk to stiff peak then add food coloring
-Whisk again in low speed about 1 minute
-Add dry ingredients in 2 times
-Gently fold the batter until combined
-Start the macaronage process by scraping the batter to sides of the bowl and collect it, repeat and check the batter consistency every time
-Stop when reaching the ribbon stage (please check the video)
-Pipe 3cm diameter circles using round tip (I use the 8cm nozzle)
-Tap the tray 5 -10 times to release large bubbles
-Let the shells dry for about 30 - 60 minutes
-Bake 140C for 15 minutes
-Let them cool down before removing from the baking tray

The filling:
-Simmer sugar and water on medium heat
-Whisk 2 egg yoks
-When the sugar syrup reaches 118C, slowly drizzle into the egg yolk while whisking
-Whisk until the mixture cool to room temperature, then gradually add soften butter
-Assemble the macarons with the filling in the middle
