Christmas red velvet cream cheese cake recipe

1. The red velvet cake

Beat 2 egg white + a pinch of salt + 1/2 tsp lemon juice
Add total 50g sugar
Add 2 egg yolks, beat to combine
Sift in 50g cake flour + 4g cocoa powder + a pinch of salt
Fold the batter by hand using a spatula

Mix 20g vegetable oil with 35g butter milk (or 32g milk +3g lemon juice)
Add 1 tsp of red food coloring and mix well

Pour the red mixture into the batter, gently fold to combine all ingredients

Pour the batter into the mold, bake at 180C for 25 minutes

2. The cream cheese
Whip 70g heavy cream (60%) with 50g sugar (adjust to taste)
Add 80g cream cheese
Beat until smooth

Mix 20g warm heavy cream + 1 gelatine sheet

Pour into the cream cheese mixture, mix well

Arrange the cake : 1 layer of cake, 1 layer of cream cheese, chill for 10 minutes in the fridge to set

Add another layer of cake, pour the cream cheese on top, chill for another 20 minutes

Take it out of the mold and decorate using red velvet crumbs
