Here's the most fluffy brioche on the earth! INGREDIENTS
400ml (1 3/5 cups) milk
80ml (2/5 cup) oil
1 egg
1 egg white
7g of dry yeast
1 tsp salt
100g (1/2 cup) sugar
850g (6 3/4 cups) flour
50g of soft butter
2 tbsp cocoa powder
100g ricotta cheese
100g hazelnut cream

METHOD

In a bowl mix together milk, oil, egg, egg white, yeast, salt, sugar and flour, add in butter while mixing with a hand. Divide the dough into two portions and add cocoa powder to the second portion. Leave for 30 minutes.
Make 8 balls from each dough piece and roll it out, to the white dough add ricotta cheese and to the dark add hazelnut cream, wrap it and transfer to a baking pan, leave for 20 minutes.
Grease with egg yolk and bake at 180 ' C (356'F) for 25-30 minutes.
