This recipe makes a tasty side dish to any dinner entree! INGREDIENTS
3 eggplants
250g (2 cups) flour
240ml (1 cup) water
2 eggs
¼ onion
1 tbsp marinade
Salt to taste

METHOD

Peel the eggplant and cut it into slices. Place the pieces of eggplant in a bowl, rinse with water and strain. Boil the eggplant slices in water with salt for 5 minutes
Dry them on a kitchen paper.
Mix flour with water. Add two eggs, finely chopped onion, and powdered marinade. Mix well. Cover each slice of eggplant with the mixture and fry in vegetable oil until golden brown.
